Course menu Appetizer: Mentaiko (spicy pollack roe), Tofu-like Japanese yam, and Konowata (one of Japan's top three delicacies; salted gut of trepang). Soup bowl: Matsutake mushroom soup with pike conger, ginkgo, and Japanese mint. Add a squeeze of Japanese lime on top at your discretion. Sashimi: Ise shrimp, Tuna, Amberjack, and Striped jack. Steamed dish: Autumn eggplant and Japanese yam wrapped in a slice of tilefish. Main fish: Abalone steak with Japonais sauce, a hint of butter, and vegetables on the side. Main meat: Roasted Wagyu beef with Japonais sauce and vegetables on the side. Vinegared dish: Japanese crabmeat on seaweed, decorated with salmon roe, fresh tomato, lemon, and cucumbers.
